Alan, adjustment should work fine, once you remove the tunnel cover. Be prepared to use WD40 or the like to maybe free up the mechanism. Pat, (?) I believe that simple metal bracket is available, I don‘t recall where though. Here the measurements I took, should be simple enough to make up. The rubber grommets are the same as the tank filler lid grommets. The spring latch you mean the one in front or the hold-down bracket in the back?...

I´ve installed aftermarket engine mounts, an aftermarket stabilizer and the rubbers for the gearbox mount. Loading the engine in 3rd, the knob goes aft/forward. Grant,

A Mercedes without Sonnenland material just doesn‘t seem right. Similar, knowing vinyl was original on the E-type, it‘s uncomfortable for me to see mohair on an E-type. One day my (wrong but cheap) black/black vinyl will have to go.
