I had a battery cutoff with removable key on my '65, along with a hidden switch for the fuel pump. I would sometimes remove the distributor rotor, and run a length of heavy chain through the left-front wheel and lower A-arm. You can't prevent a really determined thief, but the other 99.9% want thing...

Personally, I wouldn't be bothered by the fan coming on at 80C/176F and turning off at 70C/158F. This is keeping the engine temp in a good place and nowhere near running too warm. Welcome to my world. I did this once with a newly rebuilt (and installed) engine. After pulling the cylinder head, I installed Helicoil inserts and never had another problem.

The Coolcat fan moves a lot of air, so I think your problem lies elsewhere. My guess is that you have a thermostat that isn't opening all the way.

I still use Castrol GTLMA DOT 4 fluid and change it annually. I did mess about with DOT 5 silicone-based fluid, and found bleeding the brakes difficult due to the air suspended in it. My '65 FHC had the breather with the vertical cylinder and small outlet, and it was totally inadequate. I modified the breather assembly from an earlier car, giving the breather outlet an ID of 1.00" and this worked well. I just let the fumes dump out under the car.

Here's one more vote for the 185-15. You'll find that the car just feels "right" with the original skins. Back in the '80s, the 185-15 was difficult to source in the U.S., and I experimented with various tire sizes. The one that fit on the stock wheels without rubbing on anything was the 205/75-15. ...
