Also need to know the wheel offset (b/w the rim and the hub). Aftermarket wheels are not all the same, is why a wider tyre might fit ok on one car but rub on another. And if u want to corner like a race car you don't want the tyres to be too wide for the rims. Most references say 205 would be ideal ...

Drive worm gear has 6 teeth, speedo drive has 16. So, 1 rev of the driveshaft = 0.375 revs of speedo drive pinion.

Only glue on mine was bell housing carpet to hardura. On S3 the hardura fits together to lock itself into position. I would never add any floor glue, too easy for moisture to get trapped underneath.

Both methods are supposed to yield exactly the same result; a ride height of 15.3 – 16.5 cm (front subframe above the ground). As you point out, theory suggests they can’t. Have you changed your wheels? If they have a non original offset, of the rims relative to the hubs, the consequence may be significantly increased "scrub radius", heavier steering, increased tyre wear and instability under brakes.

Why do you think it is 7.8:1? My '72 US spec was 9:1. What is the engine number? If the last character is "L" it would have been 7.8:1. If it is "S" it would have been 9:1. I was going to do the Lutz mod also, till I learned that for the last V12 (X305) Jaguar eliminated the rear two head coolant ports and the water rail entirely?
