Do the centre section to wing joints get sealed or caulked?

No. Nothing.
Just fill it full of waxoil after it is all assembled.

As James says, just spray some wax in there.
Something like this might be better than Waxoyl though as that tends to soften and drip when warmed up.

Also make sure you use the special slightly thicker washers in between the two panels other wise you will struggle to get the brass tabs that hold the chrome trims in place through the gap.
