Every time I think I've landed on 1, 2 or 4 post there is another consideration. A friend who is a classic car mechanic mentioned that a two post on an e-type has an issue with the lift points at the rear and the rubbers get sucked out. Thanks for the responses. Thought there must be a few good reasons why a single post lift wasn't a good option.
Will go back through the various 2 & 4 post comments and suspect I'll play safe and opt for 4 post.

Just fitted a Bell exhaust and used the steel clamps. Several of the joints are blowing exhaust fumes. Any advice on whether I should continue to tighten ; they are already fairly tight but with additional leverage I can probably tighten further. I haven’t used any joining sealant - should I ? Turned out the Side Light switch had been installed the wrong way around - grrrr.

Thanks Geoff and Steve Just looked inside the brake light holder and yes, appears there are two connections (pic below) and also the bulb has what looks like two elements. Appreciate the tips and will go ahead with ordering the exhaust. The missing corner to one of the manifolds doesn't appear to be causing a problem or leaking so may just stick with old manifolds but will keep an eye out for replacements.
