Welcome Sean - lots of experience and advice around here so feel free to jump in and ask. There are several threads on EFI in the S3 Forum e.g.:

Welcome to the forum Sean ,
you are making a very wise decision and i will give you any help that i can . I take it that you have read my write up about converting an E type V12 to fuel injection but your specific question about the water rails . I have seen several different ways but i can only tell you the way i have done it , on the front i have used the original E type thermostat housing and on the back i have used the XJS which of course you have to use .On the off side which is where i started , i used a 32mm rubber water hose which connects to the original thermostat housing and then on the XJS side i got a piece of 32 mm aluminium and turned it down to the diameter to insert into the rear housing and held it in place with loctite ( of course i bored it out first ) . Then on the near side the XJS housing i mounted it in the lathe and turned the outer to 32mm .I hope this is off help but if you need any more information don't hesitate to contact me .
PS/
a V12 E type will pass everything on the road bar a petrol station , but at least you will be going one petrol station further than our carburettor friends.

Petrol is a renewable energy source - every time the tank is empty you just go to one of those station thingy's and, magically, more of the stuff comes out of the pipe! Never seems to end

Have you V12 guys considered an LPG conversion? I don't think it is that expensive for a carburettor car?

In the spare wheel well, fit tubeless tyres and do what the modern cars do - carry a tin of tyre weld!
