Hi, I need to find a decent garage with experience of balancing triple carbs, checking mixture etc

Checking mixture at iddle or speed ? This can be a big difference , IF the exhaust or the air-filter system has been changed.
A garage normally is measuring the mixture at idle. Are you driving with iddle ? No !
A needle profile of the carb-needles is fitting to the motor, if there have been no or only minor changes in the "motor-system".
