Since you're a dab hand at Photoshop, I'd visualise the car sans chrome strips under the windows. This accentuates the depth of the windows which are already higher, as you know. Admittedly it does so more on dark coloured cars and yours is OSB, but still. I think removing the chrome trims will give the effect of shallower side glass and therefore redress the glasshouse/bodywork balance in the way you desire.
Lowering car on its suspension by half an inch using adjustable spring seat dampers, or maybe lowering the car entirely with 16 wheels/lower profile tyres, would also take some of the height out of the look. You'd have to be careful with ground clearance obviously, especially if you did both, but as with the chrome trims these two options are also easily reversible and will therefore preserve the value of the car. The sunroof adds height, literally and visually, but if you got one in a close matching lbue it might help. Can't see exactly but it looks black?
The cheapest would be to learn to love the car as it is - it looks gorgeous. The public has no idea it is different from the FHC. Having come to work in my 2+2 this morning and driven it last night I have already scored one 'Nice car mister' from a group of pedestrians, plus a wave from someone coming the other way. Not bad for 12 hours, most of which were bed time. It's a beautiful car, enjoy the room and practicality that other E-types can only dream of.
