I used some clingfilm wrapped around the seal pieces to hold them in place. Worked a treat.

Interesting idea Andrew.
Presumably you then pushed the fulcrum shaft through the thin cling film. Did the rest of the cling film come out easily enough next to fulcrum mounts?
I used sticky red grease and glued them in place but even then it was tricky despite using a dummy shaft to align it all.

Brilliant.
I'll add to the top tips on IRS refurbs by saying use a pair of reversible sash clamps to spread the cage slightly to ease getting the wishbones in.
Use standard unf nuts on the fulcrum shafts and drive shafts rather than nylocs and philidas nuts until you are happy everything is shimmed up and lined up. A lot easier to undo if you have to pull it all apart again.
