Lynne

The brakes permanently sticking on is a known problem and is caused by a fault with the reaction valve on the master cylinder - white plastic thing on the end. The spring can weaken or distortion in the plastic causes a leak. However they usually remain locked on for quite a while and would prevent you moving off. Your problem may be related but from what you describe it could be a seized cylinder in one of the callipers, master cylinder or servo. Any idea when the brake fluid was last changed because if it was more than two years ago there may be corrosion?

No idea what your mechanical skills are but anything to do with the brakes warrants immediate attention. If you need help take the car to Paul Roach http://www.paulroachjaguar.co.uk/index.html who I guess is local to you in Sudbury. Top bloke!

Just while We are on the topic of brakes. V12 S3 Auto.

When I come to press the brake it gives Me the sensation
that the pedal is pushing back on My foot.

Its weird but they work well and the brake tester says
all is well.

The servo is energised by manifold vacuum. Check the hoses are the correct ones as the vacuum can collapse the hose giving the effect you are seeing if it is not suitably reinforced.
