My 66 E-type has a newly rebuilt IRS.
At speeds over 80 MPH, I have a very loud noise from the rear axle.
If I let go of the gas pedal or press it for further acceleration,
the noise disappears, but when I press it gently to keep the speed
up, the noise is there all the time. Very annoying....
No vibrations or other side effects. It is not a crunching noise.
More of a shearing? or fine grinding/cutting noise.
All ideas most welcome..!!

No idea but what you describe sounds like something rubbing...

I'd check the "low-hanging fruit," i.e., the easy stuff. My initial thought is that perhaps the handbrake cable is routed in such a way that it's making intermittent contact with the driveshaft, as the the suspension assembly shifts under load. It doesn't sound like an internal problem, but you can always have a sample of the differential oil analyzed for metal particulates.
