I am on the hatch trimming and I don't know how to fit the PVC "seal" around the hatch metal aperture. Must I stick it on the metal with the "return" pvc lip beetween the rubber seal and the metal edge ?

I stripped mine off at the start of my restoration and they were fitted as in Lataud's picture.
I did not remove rivets, so I assume they were glued.
The inner trim panels sit on top of them.

I need a very strong glue to stick it at the right place and some good press to keep it there !

I think the trim panel will keep it in place.

Warm it up with a hair drier and then glue a little bit at a time.

Hi I have just done mine, its a task but take it slowly, fit it before aperture seal & inner panel trims its just glued with good quality adhesive ,glue both the body and trim, warm trim with heat gun as you go, a little at a time and mould it into place , then fit interior side trims etc and rubber apperture.
best of luck
