#1 Wider rear wheels

I am considering installing 7 inch wide wheels on the rear of my 1970 OTS and wondered if rubbing issue would arise. If someone has done this successfully, what size tyres did you use?

You can fit them but you will need to drop the suspension to fit or remove them. Think about a puncture on the side of the road
What are you trying to achieve with wider rear wheels as they will not improve the handling or the road holding?

There are many archived threads regarding wheel/tire size, both on this site and on Jag-Lovers. Fitment depends on wheel offset. The link below is one of them. There are some linked photos of the 6.5" center laced MWS wheel in one of the posts in the thread.
While a 6.5" center laced MWS wheel apparently works with a 215/65 tire, my experience is that the maximum tire size with a 6 inch center laced
Dayton (different offset) is that tire size is limited to 205/70 (see attached photo). A
factory offset bead laced wheel would have accommodated greater width (with bump stops removed).
