They are the rotary controls for ventilation fitted to S1.5 and S2 cars.

What is that switch? which is the function of the side red light???

The second photo shows your choke lamp has come off from behind the dash. It operates whenever the choke is on (provided it is earthed and the bulb, switch and wiring are OK

The first photo shows a non-standard switch and warning lamp so you'll have to trace the wires to see what it controls. Maybe a manual radiator fan switch?

Another question, when is on the choke? when is the pusher in "cold position"? or simply, this light shows when you must to change between cold, hot and run mode?

In the meantime, check out the excellent "E-type Knowledge Base" page on this forum. It is packed with a ton of great information. The first chapter of the workshop manual has an explanation of the operating controls, recommended lubricants etc.
