I am thinking about doing away with the original air filter set-up and just having bellmouths or k&n,s or something like that. If I do are there any advantages/disadvantages that anyone knows of and what happens to the engine breather pipe

Avoid the trumpet intakes and you must have a filter. You can expect more intake noise and you will need richer UE needles but throttle response will be better and you can expect more power (the standard system costs 6% according to Jaguar tests). My current favourite is K&N filters with BCCP stub stacks and although the filters let the engine breath better the power improvement comes from the design of the stub stacks and the way they handle air flow.
